Recipe box: Two self-reliant meatless dishes

Today, we actually have two recipes, and both are meatless. (Well, technically, there's an egg in the first recipe, which vegans would shun.) Both recipes rely heavily on food storage and/or sustainable items. Enjoy!

Meatless Sausage


1 cup Peas, Beans, Lentils, or Lima Beans, dried
½ cup Breadcrumbs, dried
¼ cup Shortening or other fat
1 Egg
½ tsp Salt
1 tsp Sage

  1. Soak peas, beans, lentils or lima beans and cook until soft. Drain after cooking.
  2. Mix all ingredients in a large bowl.
  3. Remove ¼ to ½ cup of mixture and shape as sausage.
  4. Roll sausage in flour and fry in dripping.

Mandalay Salad


1 cup Peas and/or Carrots, cooked
1 cup Rice, cooked, cold
Lettuce Leaves, Cabbage, or Celery (optional)

⅓ cup Oil
1 Tbsp Vinegar
¼ tsp Salt
⅛ tsp Cayenne
¼ tsp Curry Powder

  1. Cook peas, carrots, and rice. Drain well and let cool.
  2. Mix all ingredients in a bowl.
  3. Serve cold. If preferred, serve on lettuce leaves, or on beds made of cabbage or celery.
