Recipe box: Poor Man's Cake

This recipe and photo is courtesy of recipelion.com. It's a treat that can be easily made from average food storage supplies, and could be just the thing to lift morale in a post-disaster situation. The original recipe description says:
Think you can't enjoy a sweet treat when you're living on a tight budget? Think again! With simple, inexpensive ingredients, this Poor Man's Cake Recipe is a yummy way to end your meal.


1 lb. Raisins
2 Cups Sugar
3 Cups Water
4 Tbs. Shortening
1/2 tsp. Salt
2 tsp. Baking Soda
1 tsp. Allspice
1 tsp. Cinnamon
4 Cups Flour
1 Cup Nuts, chopped

  1. Preheat oven to 300°F.
  2. Combine raisins, sugar, and water in a saucepan and cook for 10 minutes over medium heat.
  3. Add shortening and let mixture cool.
  4. Stir in the salt, baking soda, allspice, cinnamon, flour, and nuts. Transfer to a 9" x 13" baking pan.
  5. Bake at 300°F for 45 minutes.
  6. Let cool before cutting and serving.


Incidentally, if you're patient, you can make this all in a 12" cast iron Dutch oven. First cook over medium heat as in step #2, let cool, mix in remaining ingredients, and then bake at 300°F as indicated.
