Recipe: A Preparedness Breakfast

Today's recipe addresses using easily stored items to make a nice southwestern-style meal: breakfast burritos and coffee.

Note that the burritos use "real" cheese. While there are powdered and canned cheeses available, they really don't work as well for this recipe. It is worth noting that you can store some types of regular block cheese by waxing them. Read up on cheese waxing at Preparedness Pro, which is one of my favorite preparedness blogs.

Campfire Coffee

Ingredients (serves 6)

6 mugfuls of water
6 to 12 tsp of coffee (1 or 2 tsp per mugful)

  1. Add water to a pot and bring it to a rolling boil.
  2. Remove it from the heat and add coffee to amount desired.
  3. Steep for 4 to 6 minutes (the longer, the stronger).
  4. Add a few tablespoons of cold water to settle the grounds and then serve.

SPAM Breakfast Burritos

Ingredients (serves 6)

12 oz. (1 can) SPAM Luncheon Meat, cubed
4 eggs
2 Tbs milk
1 Tbs butter or margarine
6 Flour tortillas (6")
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
salsa as desired

  1. Heat oven to 400 °F.
  2. Divide each quantity of cheese into separate containers
  3. In bowl, beat together SPAM, eggs, and milk.
  4. Melt butter in large skillet, and add egg mixture.
  5. Cook egg, stirring, to desired doneness.
  6. Fill each tortilla with SPAM mixture and half of cheeses.
  7. Roll burrito; place seam side down on 12" x 8" baking dish.
  8. Sprinkle remaining cheese over top of burritos.
  9. Bake 5-10 minutes or until cheese is melted.
  10. Serve with salsa.

If using powdered eggs instead of fresh, reconstitute 8 Tbs with 10 Tbs of water and use as detailed above.

To use instant powdered milk instead of fresh, reconstitute 1/2 Tbs with 2 Tbs of water and use as described above.

Try using ham, chicken, or beef-flavored Textured Vegetable Protein (TVP) in place of the SPAM. When substituting, use 4 oz  (roughly 3/4 cup) of dry TVP and reconstitute it as described below, and then use it in place of the SPAM above:
  1. Measure the TVP crumbles into a large bowl.
  2. Pour 3/4 cup of boiling water over the TVP.
  3. Allow the TVP to absorb the water for 10 minutes.
  4. Drain the TVP of extra water.
